Recipes for Under $1 per Person


1)  Herbed Chicken and Rice by Barb Berg

 

1/2 lb boneless skinless chicken breasts, cut into bite sized pieces (.99 at Aldi) 
1 T olive oil
2 large carrots, shredded (Carrots are .50 a pound a Aldi, so this would probably be less than .25)
1 small onion, chopped  (less than .25)
2 c water or chicken broth
1/4 tsp marjoram
1/4 tsp thyme
1/4 tsp rosemary, crushed
1/4 tsp sage
1/4 tsp salt
pepper
2 c instant brown rice
1/2 c chopped walnuts
In skillet, saute chicken in olive oil for 3-4 minutes.  Add the carrots and onions, saute 4-5 more minutes or until tender.  Add water/broth, seasonings, and rice.  Stir together well, cover and bring to a simmer.  Simmer on low for 5 minutes or until rice is done.  Remove from heat and let sit for a few minutes to fully absorb any liquid.  Sprinkle with walnuts and serve.

Notes: I love the seasonings in this and add MORE than this recipe calls for.  I also use a food processor/chopper to process the carrots and onions into pretty small pieces, I think it's less work than grating and chopping.  I like the flavor the chicken broth adds but it's just fine with water.  Feel free to adjust the liquids down or the rice up or cook a little longer if it ends up too soupy.  Don't skip the nuts, they add a LOT.

2)  Goulash by Leah Larson

.... 1 lb ground turkey ($1.69 @ Aldi) brown with 1 small chopped onion (.30), drain fat, add 1 lg can tomatoes ($1) 1/2 bag frozen mixedd veggies (.50), 1/2 bag egg noodles(.75), 1 1/2 C. water, and salt, pepper, italian seasoning. Cook until noodles are tender! $4.25 makes 5 healthy, yummy, low fat servings!! I like to sprinkle shredded cheese on top before serving!

3)  Chicken and Rice Casserole by Leah Larson


boil 1 lb bonless/skinless breasts ($1.69 @ Aldi), remove the chicken and chop, add 1/2 box instant brown rice to the broth (.75), 1 large can crushed tomatoes ($1), salt, pepper and italian seasoning, cook the tomatoes, rice and broth 10 minutes, while you chop the chicken and and 1 bag of spinach, ($1.49), then add them both to the pot and continue cooking until rice is tender! I like to sprinkle this one with shredded parm. or mozz. cheese... Less than $6 and makes 6 healthy, yummy, low fat servings!!

4)  Some Made Spaghetti Sauce Soup

2 small jars spaghetti sauce mixed with 4 jars water
1 cut up chicken breast
4 chopped carrots
1 large or 2 small onions chopped
2 cups cooked black beans
1 cup uncooked rice

Boil until rice is soft.  Makes about 8 servings. Cost about $7

5)  Mexican chicken and rice

3-4 cups cooked rice mixed with 1-2 chicken breasts cooked and cut, 1-2 Cups of cooked black beans, 1-2 avocados, 3-4 cut tomatoes, and 1 cup barbecue sauce, salt and pepper to taste.  Costs about $8, serves . 8

6) Chicken and Rice stir fry

3-4 cups cooked rice, 2 chicken breasts, 2-3 carrots chopped, 1 bag frozen broccoli, 1 can pineapple, a few T oil, salt and pepper to taste.  Cost about $7 Serves 8

7)  Ham and potato soup

Cut ham off of bone.  bake ham bone with a couple inches of water in oven at 325 for an hour.  Remove ham bone.  Use the water as broth for soup.  Chop 2-3 cups of ham, 3-4 potatoes, 2-3 carrots, and 1 large onion, add to soup.  Add 1-2 cups pre-cooked northern beans.  Add water to 3/4 of the crock pot Add thyme, salt, and pepper as desired.  I like to cook this in my crock pot for 15-20 hours as the flavor gets stronger the longer it cooks.  Ham is about .99 a pound at Aldi.  The rest of the ingredients are very cheap.  This usually serves about 10.  Costs about $5

8)  mashed potatoes with hamburger and gravy
Ground one pound of hamburger.  I use the $1 boxes of broth at Aldi and add a mix of corn starch and water to thicken to gravy.  1 pound of hamburger is about $3.50.  Potatoes are about .20 a pound.  Add margarine to potatoes.  Mash.  Salt and pepper to taste.  This would cost under $6 to make and makes 5-6 servings.  You could easily substitute ground turkey, which would then make it about $4 to serve 5-6 people.

9)  Spaghetti

1 pound hamburger, 1 jar spaghetti sauce, 1 package pasta.  Serves 4-6 costs about $6  note:  Personally, I don't buy pasta unless I get it for under .25 a box, but generally they go on sale for $1 a box.  Hamburger is about $3.50 a pound, but again, you could substitute ground turkey, which is under $2 a pound.  Aldi sells spaghetti sauce for $1.19 a jar.  So you could do this meal for as little as $3 and serve a family of 5.
